He recently returned to Melbourne with a trophy proclaiming his margherita the world’s best — Johnny di Francesco knows his pizza and now the world knows it, too. His 90 Secondi is the sister restaurant to 400 Gradi in East Brunswick (which is soon to also open at Crown).
Main event Di Francesco was the first Australian trained in Naples to the AVPN rules and is the association’s Australasian principal. It’s all about the crust here — full of air, fluffy, pliable, a little bit chewy, a little bit crisp. Toppings are simple, letting just a few ingredients truly shine.
Go-to pizza It is hard to go past a margherita cooked by the world’s No.1, but the 90 secondi Napoletana (fior di latte, anchovies, olives) is an elegant way to get a salt fix.
