Beef stock is a bit...well...beefy for mine. Chicken is a little more delicate, IMO, and doesn't fight the meat.

And if you like mushrooms, but the kids don't, some really fresh, firm mushies can be grated in too.

One is usually enough. A firm really sweet type like pink lady or Royal Gala. The sweetness helps counter the acidity of the tomatoes, and it mean you shouldn't have to add brown sugar in for that.

Also, a dash of cinnamon adds a nice touch too. Not too much though, it can be overpowering.

You can do the apple trick in hamburger patties too, as well as finely chopped onion.
